Recipe of the Month
Sausage Breakfast Casserole

Bake Time: 1 hour
8 SLICES OF BREAD (or 4 SLICES + BOX OF SEASONED CROUTONS)
1 LB SHARP CHEDDAR CHEESE
2 LBS JIMMY DEAN OR OWENS SAUSAGE (1 HOT, 1 REGULAR)
7 EGGS
2 1/4 CUPS MILK
3/4 TSP DRY MUSTARD
1/2 CAN OF MILK
1 JAR OF SLICED MUSHROOMS
TO PREPARE: Place bread in a buttered casserole dish. Sprinkle shredded cheese over the bread (using half of the cheese at this time). Fry sausage and then drain. Spread sausage over cheese & bread layers. In a mixing bowl, beat eggs, milk and mustard together. Pour this evenly over top of casserole dish mixture. Sprinkle other half of cheese over the top at this time. Refrigerate overnight. Next morning, dilute mushroom soup with the half can of milk. Add the mushroom slices to top and pour soup and milk mixture over everything.
BAKE at 350 degrees for one hour (may need additional 15 minutes if not heated all the way through). Allow to set for 15 minutes before serving. Serves 20 - 25.
